Tortilla Cheese and Ham Quiche

Perfect for breakfast or lunch this healthy tortilla quiche is so simple to make and so delicious. You can easily experiment with different fillings but this combination works a treat!

What you need

150g broccoli, cut into small florets
4 large wholewheat tortilla wraps
4 eggs
1 egg white
200ml skimmed milk
75g Eat Lean cheese
150g cottage cheese
100g smoked wafer ham chopped
Handful fresh chives, chopped

What to do

  1. Preheat the oven to 180°C.
  2. Pop the broccoli into boiling water for 1-2 minutes, then drain. Set aside to cool slightly.
  3. Spray a 20cm springform tin olive oil.
  4. Put a whole tortilla in the base of the tin, cut  the remaining tortillas in half and use the halves to overlap the edges up to the rim.
  5. Whisk the eggs, egg white and milk in a jug and add some salt and pepper.
  6. Scatter the cheese, cottage cheese, broccoli and ham over the tortilla base.
  7. Pour over the egg mixture and sprinkle the chives on top.
  8. Bake for 50-55 minutes, until cooked through and golden.
  9. Leave to cool in the tin for 10 minutes before removing and cutting into wedges to serve.
