Rosemary and Coconut Sugar Roasted Nuts

Nuts are a great snack as they are packed full of healthy fats. The rosemary and sugar work so well together here to give a really delicious flavour. Make a big batch and have a handful as a snack.

What you need

500g mixed nuts (I used pecans, cashews, almonds, brazil nuts, peanuts and hazelnuts)
2 tbsp coarsely chopped fresh rosemary leaves
1/2 tsp cayenne pepper
2 tbsp coconut sugar
2 tsp salt
1 tbsp melted ghee or butter.

What to do

  1. Preheat the oven to 170 degrees C.
  2. Toss the nuts in a large bowl to combine and spread them out on a baking sheet.
  3. Toast in the oven until light golden brown for about 10 minutes.
  4. In a large bowl, combine the rosemary, cayenne, sugar, salt and melted butter.
  5. Thoroughly toss the toasted nuts in the spiced butter.
  6. Place back in the oven for a further 15-20 minutes. Keep an eye on them as you don’t want them to burn. the sugar should just begin to caramelise.
  7. Remove from oven and leave to cool.
  8. ENJOY!
