Protein Chocolate Peanut Butter Brownies

Chocolatey? Yes. Peanut buttery? Yes? Tasty? Hell yeah!

What you need (makes 16)

320g gram flour
240g coconut sugar
240g light brown sugar
120 g cacao powder
1 tsp baking powder
150g chunky peanut butter
225ml water
225ml rapeseed oil
2 tbsp vanilla extract
70g cocoa+ high protein chocolate broken into small pieces

What to do

  1. Preheat the oven to 170°C. Line a baking tin with baking parchment or if you have a silicone baking tray that works a treat!
  2. Sift the flour into a bowl and add the sugars, coacao powder and baking powder together thoroughly to remove any lumps.
  3. Add a tablespoon of the peanut butter with the water, oil, vanilla extract and beat with a whisk minutes to combine. If the mix looks too thick, add a little more water
  4. Add the chocolate chunks (leaving a few aside to sprinkle on top) and beat together.
  5. Pour the mix into the prepared tin and even out.
  6. Using a spoon blob the remaining peanut butter over the brownie mix, the using a fork, drag through the top layer of the mix in the opposite direction to the lines to create a marbled effect.
  7. Bake for 45–50 minutes (or until semi-firm in the centre).
  8. Set aside to cool for as long as you can before delving in!
