Protein Banana Bread

Perfect as a snack, or for breakfast served with a healthy helping of nut butter, or greek yoghurt and drizzled in honey. The combinations are endless.

This loaf will also easily freeze, so you can slice it up and then have it as and when you want it.

What you need

100g wholewheat flour
70g buckwheat flour
2 tsp baking powder
1 medium egg
2 egg whites (66g)
100g 0% total Greek yogurt
100ml unsweetened almond milk
4 tsp light agave syrup
15g truiva
3 1/2 mashed ripe bananas
1 scoop vanilla protein
30g nuts (or as many as you wish)

What to do

Mix together the banana, milk, eggs, yoghurt, agave, truiva and protein. Sift in flour and stir in nuts.

Pop the mixture in a loaf tin and bake for about 45-50 minutes at 150°C – keep and eye on it as you don’t want it to burn or go dry.
