Peanut Butter Millionaire Shortbread

Fancy a healthy treat? They may look unhealthy but these are completely natural and free from any refined sugars. So delicious with a combination of three layers of goodness! Dark chocolate, peanut butter raw caramel and a crumbly base. What more could you want?

What you need (makes 16 slices)

Shortbread base
200g instant oats/oat flour
200g ground almonds
55g maple syrup
40g melted coconut oil
1tsp vanilla essence

Peanut butter caramel
400g pitted medjool dates
150g crunchy peanut butter
1tsp vanilla essence
2tbsp melted coconut oil

Chocolate top
250g 75% dark chocolate

What to do

  1. Add all the ingredients for the shortbread base and pulse until it comes together when you pinch it in your hand. If it is still too crumbly to hold together, add a little water.
  2. Empty this mix and press it into a square silicone tray. I used a 24cm x 24cm. (Make sure to use grease proof paper if using a metal tin). Pop the into the freezer whilst you make your caramel.
  3. Blend the dates until they form a paste and then add the other ingredients, blending until a smooth caramel forms. Spread this lovely mix onto the base and then return it to the freezer.
  4. Melt the chocolate in a bowl over a pan of boiling water until silky smooth. Pour this onto the caramel and return to the freezer for at least an hour.
  5. Be sure to remove them from the freezer 10-15 minutes before slicing to prevent it from cracking.
