Muesli and Almond Butter Bars

These bars are delicious. Gooey and sticky with lots of oaty goodness. They are so easy to rustle up and much better alternatives than shop-brought versions. Great if you are on the go, as a pre workout snack, or just with a good old cup of tea.

What you need (makes 16)

400g no added sugar muesli (I used a Tesco own brand muesli)
6 generous tbsp almond butter
100g honey
9 Medjool dates
40g flaxseed
2 tsp cinnamon
100g raisins

What to do

  1. Preheat the oven to 180ºC. If you are not using a silicone baking tray, lightly grease a square dish/tray with a little coconut oil.
  2. Gently heat the honey and nut butter in a small pan over a low heat. Add 100ml of warm water to loosen the mix. You may need to add a little more water if the consistency is too thick.
  3. Meanwhile, slit open the dates, pull out and discard the stones, then place into a blender with 100ml of warm water. Blitz to a paste, stir into the warmed honey mixture.
  4. Add your muesli, raisins, flaxseed and cinnamon to a large bowl and stir until evenly mixed.
  5. Add in the honey mixture until it is all nicely combined.
  6. Spoon it into the prepared baking dish, using the back of a spoon to press it into an even layer.
  7. Bake in the hot oven for 15 minutes, or until golden and set.
  8. Leave to cool slightly, turn it out onto a board and cut into squares, then set aside to cool completely. Store in an airtight container.
