Lean Beef Filo Pie

Winter is coming! So that means we need to eat more pie! Comforting, healthy, lean and delicious. What more could you want?

What you need

800g lean beef
80ml red wine (!!)
30g plain flour
1 tbsp ghee
1 tbsp coconut oil
1 onion
200g mushrooms
1 tsp chopped garlic
240 ml beef stock
2 tsp worcestershire sauce
2 tsp dijon mustard
2 bay leaves
1 tsp thyme
1 tsp rosemary
120g light cream cheese
100ml low fat sour cream
Filo pastry

What to do

  1. In a bowl mix the beef with the red wine and season with salt and pepper and leave to marinade for 10-15mins.
  2. Once marinated drain the beef and keep that red wine to the side. We need that later.
  3. Toss the beef in the flour.
  4. Add the butter to a pan and brown the beef (it only needs a few minutes). I recommend doing this. Remove from the pan and place to one side when all beef is done.
  5. Put the coconut oil and the rest of that red wine back in the same pan and add the onion and garlic. Pop in the bayleaf, rosemary and thyme too and cook for 4-5 minutes.
  6. Add the beef, beef stock, worcestershire sauce, mustard, mushrooms and simmer on a low heat for  for 30 mins.
  7. After 30 minutes, stir in the sour cream and cream cheese.
  8. Add all this delicious mix into a big pie dish and place crumpled filo pastry on top. Rustic is best! Spray with olive oil and place into the oven.
  9. Cook for 15 minutes at 200°C. Keep and eye on your pie. You want it nice and crispy and golden!
  10. Serve piping hot with lots of lovely greens.
