Healthy Almond and Cashew Blondies

These are a new favourite of mine!

They are so simple and easy to make, amazingly tasty (your friends will never know they are healthy!) and they contain no refined sugar.

A good one to keep those sugar cravings at bay!

What you need

4 eggs
2 tsp of vanilla extract
2 tsp of cinnamon
175g of cashew butter
175g almond butter
240g coconut sugar
2 tsp baking soda
200g of good quality dark chocolate

What you need to do

  1. Preheat oven 160°C.
  2. Pop the eggs, vanilla, cinnamon, cashew and almond butter, coconut sugar, baking soda into a bowl. Use an electric whisk to mix until smooth.
  3. Roughly chop up your chocolate into small pieces and str them through. That is all you need to do! I told you it was easy!
  4. Line a baking tray with baking paper and pour the mixture into the tin.
  5. Bake for 45-50 minutes. Keep an eye on it. You just want to make sure it is cooked right through in the middle. If making a smaller batch reduce the cooking time.
  6. Take out the oven and then leave to cool. Cut and enjoy.

These will keep for a few days in an airtight container but I don’t think they will last that long! They definitely don’t in my house!
