Feel Good Protein Flapjacks

These flapjacks are so delicious! They are my go to when I have some bananas that are extra ripe and need using! Great for a snack, on-the-go or as a pre-workout boost!

What you need

50g coconut oil
2 tbsp smooth peanut butter
3 tbsp maple syrup (or honey)
2 large ripe bananas (mashed)
1 apple (grated)
250g rolled oats
1 scoop vanilla protein (optional)
85g dried apricot, chopped
100g raisins (if you are feeling cheeky you could use some dark chocolate covered raisins)
85g mixed seeds

What to do
  1. Heat oven to 160C.
  2. If not using a silicone baking tray, grease and line a 20cm square tin with coconut oil and baking parchment.
  3. Heat the coconut oil, peanut butter and honey or maple syrup in a small pan until melted. Take off the heat.
  4. Pop in the mashed banana, apple and 100ml hot water and mix until combined.
  5. In a separate bowl mix the oats, protein, dried fruit and the seeds into .Pour in the combined banana and apple and stir until everything is coated by the wet mixture.
  6. Tip into the mix into the tin and level the surface.
  7. Bake for 50-55 mins until golden. Keep an eye on it.
  8. Leave to cool in the tin and then you can cut into 12 pieces. Store in an airtight container in the fridge.
