Chocolate Orange Cookies

A healthier version of a favourite with a zingy twist. Delicious and super easy to make chocolate orange chip cookies!

What you need

175g coconut sugar
120g coconut oil
1 egg
1 tsp vanilla essence
250g buckwheat flour
1 tsp baking powder
Pinch of salt
125g dark orange chocolate (I used J.D. Gross Ecuador 70% Dark Chocolate with Orange which I picked up in Lidl)

What to do

  1. Preheat the oven to 160°C and line 2 large baking trays with baking paper.
  2. Pop the coconut oil and sugar into a bowl and cream using a electric hand whisk.
  3. Then add the egg and vanilla and process again.
  4. Add the flour, baking powder and a pinch of salt and whisk again until fully combined.
  5. Roughly chop up your chocolate and throw the chunks into the dough. At this stage stop using your whisk and mix together with a spoon.
  6. Roll the dough into small balls and place on a baking tray about 5cm apart. Make sure you leave enough room otherwise your cookies will all merge into one!
  7. Bake for 12 minutes until golden around the outside, then remove from the oven and leave on the trays to cool and harden if you can but I recommend eating one warm!
