Chicken, Smoked Gammon and Leek Filo Pie

Who doesn’t love pie! Especially when it is a healthy kinda pie! I adapted this recipe from Lean in 15 (the first book from the amazing Joe Wicks aka The Body Coach). A great heart warming meal packed full of protein and healthy fats.

What you need

1 onion, chopped
3 leeks, finely chopped
1 tsp easy garlic (or 1-2 garlic cloves finely chopped)
1 large portobello mushroom
3 chicken breasts, sliced into small chunks
2 smoked sweet cured gammon medallions, finely chopped
100ml 1/2 fat crème fraîche
250ml chicken stock
100g spinach
1 tbsp fresh chopped rosemary
1 tbsp cornflour
1 tbsp ghee or butter
Filo pastry
Olive oil

What to do

  1. Preheat your oven to 180-190°C.
  2. Pop the ghee in the pan and add the onion, leeks, garlic, rosemary and mushrooms. Cook for 3-4 minutes until softened.
  3. Add the chicken and gammon and cook for a further 4-5 minutes.
  4. Add the chicken stock and leave to simmer. Whilst simmering mix th cornflour with two tablespoons or water. Add to the pan along with the crème fraîche and season with salt and pepper.
  5. Remove from the heat and add the spinach.
  6. Place into a big dish and place crumpled filo pastry on top. Rustic is best! Drizzle with olive oil and place into the oven.
  7. Cook for between 15-20 minutes. Keep and eye on your pie. You want it nice and crispy and golden!
  8. Serve piping hot with lots of lovely greens.
