Cacao, Chia and Coconut Protein Bars

Delicious, moreish protein bars that are full of antioxidants, omega 3 and loads of nutrients – and best of all no baking required! So easy to make and keep for up to 2 weeks in the fridge.

What you need

1 cup medjool dates
1 1/2 cups mixed nuts
1 1/4 cups chocolate whey protein
2 tsp cacao powder
1/3 cup chia seeds
1/2 cup desiccated coconut
1/3 cup cacao nibs
1/2 cup coconut oil
2 tbsp tahini
1-2 tbsp honey
2 tbsp water
Desiccated coconut for the top and bottom of the protein bar

What to do

  1. Whiz together dates, protein and cacao.
  2. Add all other ingredients (except extra desiccated coconut) and mix until it begins to combine.
  3. Line a baking tin with baking parchment and sprinkle with desiccated coconut.
  4. Press mixture down firmly, topping with more desiccated coconut.
  5. Put in the fridge for a couple of hours to set.
