Black Bean, Pecan and Hazelnut Brownies

Made from black beans and maple syrup these brownies are flour-, grain- and gluten-free. They are guilt free too! Seriously delicious and so much healthier than your regular brownie. Chocolatey, nutty, gooey  goodness.

What you need

2 tins of black beans (drained and rinsed)
220g coconut oil
85g cacao powder
4 eggs
200ml maple syrup
1 1/2 tsp granulated stevia
1 1/2tbsp vanilla extract
1 tsp coffee powder (I used Nescafe Azera)
Sea salt
150g chopped pecans and hazelnuts

What to do

  1. Preheat oven to 165°C. Grease the inside of a baking dish or alternatively use a silicone baking tray).
  2. Melt the coconut oil in a pan and then leave to cool down a little
  3. Pop the black beans (drained and rinsed) eggs, cacao powder, maple syrup, stevia, vanilla extract and coffee into a food processor and mix until smooth.
  4. Add the melted coconut oil very slowly (so not to cook the eggs!)
  5. Stir in most of the nuts but keep a handful to sprinkle on top.
  6. Pour the mixture into your baking dish/tray and sprinkle on the remaining nuts.
  7. Bake for 40 minutes, until the browns feels firm but springy and the surface has cracked a little.
